Garden-Fresh Jersey Tomato Basil Salad

4 large Jersey
tomatoes, diced
1 small red onion, thinly sliced
1 cucumber, peeled and diced
¼ cup fresh basil leaves, chopped
¼ cup extra-virgin olive oil
2 Tbsp balsamic vinegar
Salt and freshly ground black pepper to taste
½ cup crumbled feta cheese (optional)
In a large bowl, combine the diced tomatoes, red onion, cucumber, and basil. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
Pour the dressing over the tomato mixture and toss gently to coat. If desired, sprinkle the crumbled feta cheese on top before serving.
Serve immediately or chill in the refrigerator for an hour to let the flavors meld together.
